1-2 Servings
Ingredients:
1 c quinoa
2 cucumbers, diced
2 tomatoes, chopped
1 red onion, finely diced
4 green onions, chopped
1 bunch parsley, chopped
Juice of 1 lemon
1-2 Tb avocado or MCT oil
salt & pepper to taste
Directions:
- Bring 2 c water to a boil in a small pot.
- Add quinoa, reduce heat to low, cover & simmer until water is absorbed (about 10 minutes).
- Remove from heat and allow to cool.
- Place tomatoes into a bowl with quinoa, parsley, onion, green onions, and cucumber.
- Toss well to mix. Add lemon juice, oil, and season with salt and pepper to taste.
- Serve immediately, or let stand for 30 minutes to allow flavors to blend.
