INGREDIENTS
- 1lb green beans
- 1/2 cup olive oil
- 2 jalapeno peppers, seeded and chopped
- 1 tbsp vinegar
- 2 tbsp lemon juice
- 1 tbsp onion, minced
- 1 tbsp parsley, minced
- 1 tbsp fresh cilantro, minced
DIRECTIONS
- steam the green beans for around 15mins until crisp tender, drain.
- whisk the remaining ingredients together and pour over the green beans. Allow them to marinate for at least 1/2 an hour.
- serve either at room temperature or chilled.
